    Default Possible Insurance Solution

Instead of paying $1600+ a year on insurance, why not buy a mini computer screen that you have a liability waiver on that you could also use as a credit card processor as well? It might cost $1000 but it would be worth it because it would last many years (hopefully) and save you a ton of money in the end. But would people actually sign the waiver? Is it legal? Would it hold up in court? All questions I need answered.

Liability waivers rarely hold up in court cases, and would make your local government laugh at you. The are not a replacement for insurance. That and your passengers would not feel very confident.
